HomeMy WebLinkAboutCorrections Services CookJob Title: Department: Reports To: FLSA Exempt: Union: BBP: Salary Level: Location: Jefferson County Job Description Corrections Services Cook Sheriff's Office (Corrections) Jail Superintendent No UFCW No Grade 24 Jefferson County Jail Approved By: Human Resources Manager Approved Date: September 2015 SUMMARY: Prepares and cooks meals for inmates at the County Jail taking into consideration appearance, dietary purpose, and modifications as well as estimation and timing of quantities to respond to serving schedules and Jail population. Oversees the inmate laundry operation and orders housekeeping supplies for the Jail. ESSENTIAL DUTIES AND RESPONSIBILITIES: Include the following. Other duties may be assigned. Determines the types, quantity, and quality of food to be prepared according to cooking schedule and dietary requirements. Create and install menus that meet and/or exceed RDA standards established by the USDA. Maintain recipe files, costs and nutritional analysis. Tests food for doneness and flavor and makes necessary adjustments. Prepares food by washing, trimming, cooking, and seasoning or delegates this to be done by assigned inmate workers. Confers with Jail Superintendent regarding modifications to food preparation schedules, daily menu, inmate population, best pricing from suppliers. Orders and receives foodstuffs, kitchen and laundry supplies to correspond with projected needs and keeps records and accounts. Also may place orders for Animal Control and Evidence Departments. Performs and oversees the sanitary operation and maintenance of the kitchen and laundry areas, storage areas, units, and equipment. Identifies the presence of things causing food deterioration and takes preventative action. Cleans cooking areas. Monitors the storage and thawing temperatures of foodstuffs. Trains and directs activities of inmate workers assigned to kitchen and/or laundry details. Administers food handler permit testing to inmate workers. Trains the Weekend Cook (when staffed). Insures compliance with all health inspection requirements. Maintains membership in corrections -related dietary organizations as desired. SUPERVISORY RESPONSIBILITIES: This position has no supervisory responsibilities. EDUCATION and or EXPERIENCE High school diploma or general education degree GED and two years related experience and or training in large quantity food preparation or equivalent combination of education and experience LANGUAGE SHILLS Ability to read a limited number of two and three syllable words and to recognize similarities and differences between words and between series of numbers Ability to print and speak simple sentences. REASONING ABILITY Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions Ability to deal with problems involving a few concrete variables in standardized situations. CERTIFICATES LICENSES REGISTRATIONS Valid Washington State Driver's License Current Food Handler s Permit from the Jefferson County Health Department OTHER SKILLS AND ABILITIES Knowledge of the practices involved with large volume food preparation Knowledge of foods and food preparation methods including the temperatures which provide the best utilizations and yield of food items Ability to sequence or space cooking of foods so that their nutritional quality flavor appearance are preserved and ready at the right time Knowledge of requisitioning and storing food and supplies general kitchen supervision and the practices involved in sanitation and safety in food handling.
