Dear Jefferson County Board of County Commissioners,
Jefferson Healthcare is pleased to submit a funding request to the Jefferson County Board of County
Commissioners (BoCC) to support infrastructure development at the Jefferson County Fairgrounds in the
amount of $100,000, which is 20% of the overall project cost of approximately $500,000. This project
focuses on upgrading and renovating a commercial grade kitchen in the Oscar Erickson Building at the
Jefferson County Fairgrounds. This kitchen will be used by Jefferson Healthcare during the campus
expansion and modernization construction period, roughly 18 months, but will be donated to the
Jefferson County Fairgrounds upon construction project completion for community use.
Jefferson Healthcare is building a 55,000 square new addition to replace an aging and seismically
unsound building that currently houses administration, the OBGYN Clinic, and the dietary kitchen and
café. This new addition will add several new services to our community, including a linear accelerator for
radiation therapy treatment for cancer patients, neurology, pulmonology, and an outpatient surgery
center. Additionally, it will expand care access to current services, including OBGYN services,
dermatology, urology, and wound care. The space will also house a new kitchen for the hospital as well
as expanded café space. During this time, the existing cafeteria must be transferred to ensure that
patients are receiving nutritious and medically appropriate meals during their inpatient stays. Although
the simplest solution would be to develop a temporary kitchen onsite, Jefferson Healthcare has chosen
to invest almost $500,000 in building a permanent kitchen installation at a local community asset: the
Jefferson County Fairgrounds.
The importance and societal impacts of community kitchens have been documented in the last decade
as an important tool for building social connectedness and supporting a multitude of community
programs that lead to a resilient and high functioning community. These include skill development in at-
risk populations through the implementation of cooking classes, supporting fundraiser events for the
community, processing farm produce into value-added products to be sold locally, as an emergency
management food resource, and as a workforce development program for food service employees to
support our local economy. Following the completion of the campus expansion and modernization
project, Jefferson Healthcare is committed to leaving behind a fully functional, commercial grade kitchen
that will be managed by the Jefferson County Fairgrounds board.
This project supports county-owned infrastructure and would leave behind an asset from which the
community would achieve long term benefit. Additionally, it allows Jefferson Healthcare, the primary
implementation partner of a multitude of COVID response initiatives, to continue to serve our patients
forward to answering any questions or comments.
