Seeking an experienced baker and/or miller with weekend availability for our baking program at Chimacum Valley Grainery, a small, unique farm-based, artisan grain mill and bakery located in rural Chimacum on the Olympic Peninsula of Washington. Ideal candidate will have strong work ethic, can-do attitude, and commitment to producing high-quality, handcrafted breads/baked goods. Mondays/Thursday shifts, with Weekend availability preferred. 20-30 hours/week to start. Job Summary: Chimacum Valley Grainery is an organic family farm, stone mill, wood fired bakery and craft micro-brewery — growing and milling heritage and modern landrace grains selected for flavor, nutrition and local climate resilience. We are seeking a passionate and skilled artisan baker with experience in baking and interest in local food systems to join our small, dedicated team. The ideal candidate will have a strong work ethic, can-do attitude, and a commitment to producing high-quality, handcrafted breads and baked goods. Working primarily with sourdough techniques and a woodfired oven, you will be responsible for preparing, shaping, and baking a variety of sourdoughs and specialty loaves. As a farm-based, micro-enterprise, employees at the Grainery are cross-trained to do multiple tasks in multiple branches of the operation, including flour milling production, pasta making, packaging of flour and pasta, labeling products, and assembling orders for delivery and for shipping. The Chimacum Valley Grainery baker is responsible for mixing, proofing and baking pastry, bread, lighting the wood oven fire and closing it up to saturate for the next day's bake. Preferred Experience: * Mixing sourdoughs to desired consistency specific for each product (short, improved or intensive mixes) * Working with whole grain * Working with high hydration doughs 80% or higher * Working with pastry, mixing, proofing * Baking with steam and on a hearth oven Preferred Qualifications: * Previous artisan bakery experience * Culinary or baking certification or coursework * Experience with milling grains or working with wholegrain flours Responsible for: * Maintain health and safety standards * Mixing Sourdoughs for each market bake * Mixing pastry for markets * Shaping a variety of breads and pastries * Freezing, and organizing stock of pastry * Tracking ingredient needs, communicating those needs. * Managing proof and bulk times for multiple doughs * Managing temperatures of ovens - what gets baked when. * Planning out and baking all market offerings in an efficient and timely manner. * Lighting the wood oven for the following day * Sunday mix for Monday bake. * Collaborate with the team to develop new recipes and seasonal offerings. * Contribute to a positive, respectful, and efficient team environment. * Get trained to perform other duties as needed in milling, packaging and shipping * Maintain a clean and organized workspace in compliance with food safety standards. Requirements: * Food Handlers Permit * Professional experience in baking, preferably in an artisan or sourdough bakery. * Strong understanding of fermentation, hydration levels, and dough handling. * Ability to work early mornings, weekends, and holidays as needed. * Physically fit – able to lift heavy bags of flour, handle hot equipment, and work in a variable temperature environment. Must be able to lift 50# and to stand for 8hrs a day. * Attention to detail, consistency, and a passion for high-quality food. *EEO Compensation: $22-$24 per hour; wages dependent on experience. Flexibility with vacation time.
